Exercise:

Peel the eggplant and cut it into strips. Sprinkle dry starch into it, and stir well, so that each side of eggplant is covered with a thin layer of starch.

Oil is 90% hot. Put the eggplant in, stir-fry until it turns golden brown, and filter out the oil.

Pour out the oil of fried eggplant and leave a little base oil, 80% hot, add minced meat and stir-fry until cooked, stir-fry the minced garlic and chopped green onion in the lower part until fragrant, and add two spoonfuls of soy sauce and stir-fry until fragrant.
4.
Add eggplant, stir-fry a few times, add some sugar, chicken essence and the other half of minced garlic, and mix well.
