Because the dumplings are made of glutinous rice flour, the permeability of this layer of glutinous rice skin is very poor, and the air inside is limited. So when the dumplings are heated, the air in the center expands rapidly and it is easy to burst. So boil the dumplings first, and then fry them afterwards, so they won't burst.
You can also cook the dumplings on the tie some eyes, so that the gas inside can be easily discharged, it will not "explode", and so the fried dumplings will be more crunchy and delicious.
