Farm Fried Eggplant
Ingredients: Appropriate amounts of long eggplant, green and red pepper dices, minced meat, chopped green onion, minced garlic, soy sauce and salt.
Preparation: Cut the long eggplant into thick slices diagonally and soak in water. After soaking for a while, take it out and drain it for later use.
Steps:
1. Heat oil in a pan, add eggplant slices, turn on low heat, and slowly fry slices one by one until both sides are browned and the slices become soft. Set aside. This step requires patience. Frying both sides of the eggplant until brown will make it delicious.
2. After all the eggplant slices are fried, put the minced meat, minced garlic and green and red pepper dices in a pot and fry them with oil until fragrant.
3. Pour in the fried eggplant slices and stir-fry together. Add salt, soy sauce, chopped green onion and a small amount of water. Stir-fry evenly and take it out of the pan and put it on a plate.
