Steps
1. Wash the eggplant and scrape off the skin.
2. Cut into evenly sized hob shapes.
3. Add starch, flour and a little baking powder and mix well.
4. Set the pot on fire and heat the oil.
5. When the oil is eight layers hot, add the eggplant cubes.
6. Remove the eggplant pieces when they are golden brown.
7. Add sugar and soy sauce to the bowl.
8. Add salt.
9. Mix oyster sauce and water to make a sauce
10. Put the prepared soup into the pot, add chopped green onion and ginger and bring to a boil.
11. Add starch juice and bring to boil.
12. When cooked, add fried eggplant cubes and stir-fry.
