Materials:
Appropriate amount of fish fillets, a little salt, a teaspoon (5ml) of cooking wine, half an egg white, and a teaspoon (5ml) of thick wet sweet potato starch.
1. Wash and drain the fish fillets. Dry the surface with a clean cloth. Add a little salt to the fish fillet and knead it by hand until it becomes sticky.
2. Add a little cooking wine and knead it by hand until it is completely absorbed by the fish fillets.
3. Add the egg white bit by bit, and grasp it by hand every time until the egg white is completely absorbed by the fish fillets.
4. Add very thick wet starch.
5. Continue to knead until it is completely wrapped on the surface of the fish fillet, sticky and without moisture, and let it stand.
6. Add some cooking oil and mix well before entering the pot.
