Auricularia auricula, also known as auricularia auricula and auricularia auricula, is an important edible fungus in China, which is widely distributed naturally and cultivated artificially. Auricularia auricula has soft texture, tender and smooth taste, delicious taste and unique flavor. It is rich in protein, fat, sugar, vitamins and minerals, and has high nutritional value. Modern nutritionists praise it as "meat in vegetarian diet". The nutritional value of auricularia auricula is comparable to that of animal food, and it is extremely rich in iron and vitamin K.
The mycelium of Auricularia auricula is composed of colorless and transparent tubular mycelium, which has transverse zoning and branching. The hyphae absorb nutrients from the substrate and form fan-shaped hyphae under the bark.
The fruiting body of Auricularia auricula is thin, elastic, gelatinous, translucent, concave, often in spike or ring shape, and gradually changes to leaf shape. The base narrows into ear roots, with smooth surface or veined wrinkles. The diameter is generally 4 cm ~ 10 cm, and the larger one can reach 12 cm or more. After drying, it shrinks strongly, the seed layer on the upper surface turns dark brown to near black, and the lower surface is dark grayish brown and covered with extremely short fluff.
