1. First cut all the bamboo shoots in half, that is, from the central axis of the root to the central axis of the tip. After the bamboo shoots are cut in half, layers of bamboo shoots can be seen from the section. Hold the root with your left hand, and pull it down with your right hand, so that all the bamboo shoots can be peeled off at once, and then remove the hard skin and heel of the bamboo joint and root with a knife.
2. Hot water boiling: boil hot water in the pot. After the water is boiled, cut the bamboo shoots into several sections, blanch them in water, boil the water for 5 minutes, take them out when they are about 6% ripe, cool them and shred them. The treated bamboo shoots have no astringency.
