Where is the origin of rice wine?
The origin of rice wine is Shaoxing.

Rice wine is a kind of Shaoxing yellow rice wine, which is named after changing the proportion of ingredients and increasing the input of glutinous rice or glutinous rice. Rice wine is a semi-dry wine. Alcohol 15%, sugar 0.5%-3%. The wine is mellow and fragrant. Rice wine is a famous brand in Shaoxing old wine. Known as "unique in wine" and "the first in China". It is refined on the basis of Yuan red wine.

Rice wine is also called flower carving, because the bottle is engraved with flower patterns, so it is named flower carving. This custom was first born in the early 4th century. In ancient Shaoxing, there was a custom that once that family gave birth to a daughter, it was necessary to brew glutinous rice given by relatives and friends on the first 1 month after birth (commonly known as the full moon), and seal the bottle and bury it underground. When the daughter gets married, she will dig out the wine and drink it. The same is true of having a son. So this wine has "Daughter Red" or "Zhuangyuan Red".

Brewing method

Rice wine needs to increase the amount of glutinous rice and wheat bran when brewing, so it is called rice wine. Because of the high concentration of mash and the high alcohol content of the finished product, the liquor is very mellow, commonly known as "thick meat". It has clear orange color, rich fragrance, fresh, sweet and mellow taste, and has the characteristics of being more fragrant with age and not bad after long storage. It takes at least three years for rice wine to mature, and the alcohol degree brewed is about18 ~19.

In the past, due to different recipes, it was divided into single rice and double rice. Later, in order to meet the needs of consumers, all double rice was produced and exported as special rice. This wine is as deep yellow and reddish as amber, transparent and crystal clear, with unusual fragrance, mellow and fresh taste, containing alcohol 17.5~ 19.5%, sugar1.5 ~ 3.0g/100ml, and total acid 0.45g//. It accounts for 9/ 10 of the total external sales of Shaoxing yellow rice wine, and is favored by Chinese and foreign drinkers. It is a typical representative of semi-dry yellow rice wine. The aged rice wine packed in an altar is called Huadiao wine.
