Daoxiao Noodles with shredded radish and scallion oil.
Ingredients: 350g fresh handmade noodles, 6 shallots, 3 carrots 1/3 cucumbers 1/3 and 2 edible oils1/.
Seasoning: soy sauce 1 tablespoon soy sauce 1 tablespoon salt 1/2 teaspoons of sugar 1 teaspoon of balsamic vinegar.
Exercise:
1. Wash the shallots, slightly wipe the water with kitchen paper towels, cut into small pieces, peel carrots and carrots, and clean them with cucumbers for later use.
2. Put the shallots into the pot, add less than half of the cooking oil, and slowly fry them with minimum fire until they are fragrant and yellow.
3. Add light soy sauce, dark soy sauce, salt and sugar, stir-fry with chopsticks for about 1 min, then turn off the fire, drop a few drops of balsamic vinegar along the edge of the pot and stir well.
4. Put about 2/3 full of water into the soup pot, drop a few drops of cooking oil, add noodles after boiling with strong fire, stir and boil with chopsticks, pour a little cold water until boiling again, turn off the fire, cool, take out the noodles, control the moisture, put them into a clean container, mix the boiled shallots, shredded radish and shredded cucumber, and stir evenly from bottom to top.
