Ceramic kimchi jars are good, but glass has poor thermal insulation and is not protected from light. Over-fermentation of kimchi will affect the taste and even damage it.
How to make kimchi:
Wash the vegetables.
Pour appropriate amount of water into the jar, add salt and stir
Put the vegetables in, and add some garlic, ginger, and small pepper. Add remaining salt on top.
Tighten the glass lid to prevent air from entering.
After marinating for ten days, it can be taken out and eaten. First rinse twice with clean water to remove some of the salt smell inside.
Chop the kimchi, put it into a plate, add a little sugar, light soy sauce, cooking oil, minced garlic and minced pepper, stir evenly with chopsticks and serve.
