1. Clean the shrimp first
Generally, there is a sandbag where the shrimp head is connected to the shrimp body. You can half-open the shrimp head, squeeze the shrimp head with your fingers, and remove it. Squeeze out the sandbag. Don't rush to break it after squeezing it out. The sandbag is connected to the shrimp thread. Use skill to pull out the sandbag and shrimp thread together, so that the shrimps are clean. Rinse well after cleaning.
Fresh live shrimps are easier to clean in this way. When cleaning frozen shrimps, the sandbags are not easy to connect with the shrimp threads. You need to clean the sandbags and shrimp threads separately. The sandbags are cleaned in the same way as above. The shrimp threads can be cleaned with toothpicks. Clean up on the back.
2. Add ginger and cooking wine to the cleaned shrimps, stir evenly and let it sit for five or six minutes to remove the fishy smell.
