First, put the preserved sausage and liver sausage into an electric pot to steam for about 7-10 minutes. Put about ? cup of water in the outer pot. The cups are using a measuring cup for cooking rice.

While waiting, wash the two cups of rice and soak them in some water.

Cut the steamed liverwurst and salami into small slices. Keep them aside for now.

Add a little sesame oil to the cast iron skillet. This time, I used a small 16cm LC cast iron skillet, which is just the right portion for a small family of 3. To maintain a steady heat, I am using an induction cooktop and setting the temperature at 100 degrees.

Put the chopped liverwurst and sausage into the wok and stir-fry with sesame oil.

Drain the water from the soaking rice, then add it to the wok and stir-fry for about 40 seconds, so that the oil in the wok coats the rice evenly.

Pour in about 2 cups of water and add the liverwurst and sausage evenly into the pot. Use a silicone spatula to stir the rice in the bottom of the pot to prevent it from sticking to the pot, and then cover the pot with a lid. At first, the temperature can be set at 100 degrees, wait until there is white smoke from the side of the pot, turn the temperature to 70-80 degrees, continue to cook for about 10 minutes, do not open the lid during the process.

After turning off the heat, use the heat of the cast iron skillet to smother for about 20-25 minutes. When you open the lid, stir well, and you have a pot of flavorful rice. I didn't add any seasoning to the rice because the sausage and liver sausage of Guilai Biao are full of flavor. If you like heavy flavors, you can add a little oyster sauce or soy sauce while it's still hot.
