Practice:
1 Wash the bacon with hot water and cook it in the pot until chopsticks can be inserted, take it out and let it cool and slice for later use.
2. Soak Jiangdou Gan in advance, add water to the pot, cook, remove and cut into pieces for later use.
3. Seasoning and preparation: cut dried Chili into small pieces, slice garlic, shred ginger, cut shallots, salt and chicken essence.
4. After the water in the pot is dried, add bacon slices and stir-fry to get oil, add dried Chili, garlic and ginger to saute until fragrant, shovel the ingredients in the pot to one side with a spatula, add Jiangdou Gan to the other side, add appropriate amount of salt to Jiangdou Gan and mix well, then stir-fry with bacon to taste, and finally add chicken essence and shallots and mix well before taking out of the pot.
