Wash the hairy beans and set aside on a plate.
Peel the garlic and slice it into 5mm slices.
Peel the ginger and slice it.
Boil a pot of boiling water and set aside.
Making of "Braised Pork with Soy Beans":
Pour more cooking oil into the frying pan, add cold oil into the chopped pork, heat the frying pan on high heat, when the pork starts to get oil, turn to medium heat until the pork is golden brown, turn to low heat and drain out the excess oil. Fry for 10 to 15 minutes, stirring frequently throughout.
Add the ginger and garlic slices, turn up the heat to high, and use the remaining fat in the pan to pop the ginger and garlic. Stir-fry for about 1 to 2 minutes.
Pour in the prepared boiling water to cover the pork in the wok. Add salt, sugar, and season to your usual stir-fry taste. Bring to a boil over high heat, cover the pan with a lid, reduce the heat to low, and cook for about 20 minutes. Add dark soy sauce and season to your preferred sauce color.
Put in the prepared beans, stir fry and pour in the boiling water, not over the beans. Cover the pot with a lid and reduce the heat to low, cook for about 12-15 minutes, then reduce the sauce over high heat, add in the appropriate amount of monosodium glutamate (MSG), and serve with soft drinks and beer.
