Because of its special growth cycle, the upper leaves are often picked, but the roots remain in the soil, which leads to the accumulation of pesticides in the roots. In addition, because water spinach is planted in summer, the pests are more serious because of the high temperature in summer, so vegetable farmers should constantly fight pesticides. This leads to the continuous accumulation of pesticides in the roots of water spinach. The leaves are also constantly being sprayed with pesticides.
