1. Peanut braised pig's trotters
Ingredients: pig's trotters, peanuts, cooking wine, salt, light soy sauce, dark soy sauce, cinnamon, star anise, pepper, ginger, green onion, sugar
p>Method:
(1) Wash the pig's trotters, boil them in a pot, remove the foam, take them out and wash them again.
(2) Cut the ginger into shreds, cut the pepper into sections, and prepare some cinnamon and star anise. Cut the pig's trotters into pieces.
(3) Put oil in the pot, add ginger, chili pepper, cinnamon and star anise, stir-fry until fragrant, add pig trotters and stir-fry.
(4) Add cooking wine to remove the fishy smell, then add light soy sauce and dark soy sauce.
(5) Add some sugar to the pot, add peanuts and enough water, bring to a boil over high heat and then reduce to a low heat and simmer.
(6) Add salt when the pig's trotters are crispy and tender, and sprinkle with chopped green onion when the juice is reduced over high heat.
2. Braised pork trotters
Ingredients: pig trotters, dark soy sauce, steamed fish soy sauce, sugar, cooking wine, onions, ginger
Steps
(1) Wash the pig's trotters, remove the blood, and chop into pieces.
(2) Cut the ginger and green onion into sections and saute until fragrant. Add the pig's trotters and stir-fry until the surface of the pig's trotters is slightly burnt. Pour in cooking wine, cover and simmer.
(3) When the cooking wine in the pot is almost dry, pour in an appropriate amount of dark soy sauce and steamed fish soy sauce, and stir-fry so that the pig's trotters can be colored.
(4) Add boiling water to cover the pig's trotters, simmer over low heat for 40 minutes, be careful to add water.
(5) Wait until the pig skin is stewed, add some sugar and salt, and turn on medium heat to reduce the juice of the pig's trotters until it becomes thick.
