This is how to cook hairy crabs: The first step is to raise them.
Put the crabs you bought into the pool, add water to one-third of the crab, not too much, leave it there for about an hour, let it digest the food, and soak away the dirt on the body. It will be easier to clean and cook after a while.
It's even more delicious after cooking.
The second step is to soak.
Prepare a clean pot, either a soup pot or a wok. Add an appropriate amount of water, 2 tablespoons of salt, 1 green onion, 2 slices of ginger, 2 tablespoons of cooking wine, and 2 tablespoons of white wine. Then brush the free-range crabs clean with a small brush.
Put it in the pot and soak it for a while.
After adding the white wine, the crabs soaked in it and remained motionless, probably drunk.
The third step is to simmer.
After soaking for 5 minutes, turn up the heat and bring the crabs to a boil, then turn down the heat and simmer for 2 minutes, then turn off the heat and simmer for a while before removing from the pot.
When the crab is cooked in this way, the crab roe will not leak out at all, and the crab legs will not fall off.
Step 4: Prepare dipping sauce.
Prepare a small plate, then chop the garlic and ginger into small pieces, put it into the plate, add 2 tablespoons of balsamic vinegar, 2 tablespoons of light soy sauce, a little sugar, a little sesame oil, stir evenly, and the dipping sauce is ready.
The fifth step is to take out the pot.
After doing this, the crabs are almost simmered and ready to be taken out of the pot.
