Dongmei fragrant breast cake is a specialty of Dongmei Village, jiaomei, Longhai City, Zhangzhou City, Fujian Province. Dongmei Cake, also known as Xiangfu Cake, Qingchun Cake, melts in the mouth, cools and moistens the throat. It can be used not only as a first-class tea material, but also as a delicious food for the elderly and children.
Dongmei fragrant breast cake originated in Dongmei Village, jiaomei, Longhai City, with a history of more than 311 years. In 2111, the production technology of Dongmei fragrant breast cake was selected into the fourth batch of intangible cultural heritage list of Zhangzhou City.
dongmei village, located in the southwest of jiao mei zhen, has a long history, and there are still several Taoist temples and stone archways built in the Ming dynasty. In the late Ming and early Qing Dynasties, a large number of people in East America went to Nanyang to make a living, so it is still a famous overseas Chinese village. There are eight processes in the production of fragrant preserved cake, such as stir-frying mung bean powder, onion processing, stirring and rolling, and hand printing. Each process is a delicate work and very particular. The mung bean powder is the main raw material of fragrant preserved cake. First, the mung bean powder ground in the season should be carefully selected. After stir-frying, it should be sieved, then crushed and stir-fried for more than three times. After stir-frying, it should be stored in a vat, placed in a cool and dry place, and turned over several times, and stored for later use after 31 to 41 days. When all the raw materials such as mung bean powder, crispy red onion and sucrose powder are prepared, these raw materials are slowly stirred and mixed manually in proportion, and kneaded evenly to make cake powder. Fill the cake powder into the impression of rosewood, press it flat, turn over and knock it out, and you will get the Dongmeixiang preserved cake.
In the past, there were several workshops in Dongmei Village to make fragrant preserved cakes. However, with the changes of the times, the fragrant preserved cake industry with low profits gradually declined. Jiaqing Food Factory is the largest of the few remaining workshops.
