First prepare beef soup:
Put the beef in cold water, force the blood out of the beef and wash it with warm water for later use.
Put the prepared seasoning into the pot, add the beef, and don't cut the beef into small pieces! Heat water. Add as much hot water as you want to drink soup. I use an electric pressure cooker, just adjust it to the corresponding program. It's best to cook slowly in a cast iron pan, which takes too long. ) Be sure to cook the meat thoroughly.
Boil beef soup, remove seasoning and beef. Put it in a small pot and add milk. (Actually, the authentic Yanji beef soup is also made of milk, so the soup is white. ) Finally, add beef powder for later use. Let the beef cool aside so that it can be cut well later.
Now prepare the beef sauce, which is the soul of this soup. Take a piece of freshly cooked beef and chop it up. Chop chopped green onion. Add cooking oil to the pot, stir-fry beef and chopped green onion in the pot, add Chili powder and dried perilla leaves and stir-fry until fragrant. Add Korean hot sauce, Korean big sauce and a little water. This amount needs to be mastered by yourself, not too much, in order to melt the sauce. Add soy sauce to color. Stir-fry to the right consistency for later use.
