The first method:

4. Find a clean pot, pour in an appropriate amount of oil, and heat the oil. After the oil is hot, slowly put the chicken wings we just prepared into the hot oil pot. With the unslit side facing the bottom of the pot, wait until the color changes, then turn the chicken wings over to the slashed side.

6. The second method:

2. First take out the chicken wings, wash them with water, then find a clean basin, add water, put the washed chicken wings into the basin, and soak them in clean water for half an hour. Soak out the bloody water, then drain the water, replace with fresh water, and rinse the chicken wings.
3. Take out the onions, ginger, pepper, star anise, and rock sugar. Then remove the skin of the onion and ginger, wash them with water, cut the onion into sections, slice the ginger, and set aside. Find a clean pot, add water, turn on the heat and bring the water to a boil, then put the soaked chicken wings in and cook. After cooking, take it out to control the water.
4. Find a clean pot, pour in an appropriate amount of oil, heat the oil over high heat, then add the onion slices, ginger slices, peppercorns, and star anise, stir-fry together until the aroma is released, and then Take out the chicken wings that have controlled the water, put them into the wok, and stir-fry evenly.
5.
