Shiqi squab is famous for its ingredients.
In the last century, returned overseas Chinese in the United States brought back excellent pigeon breeds to Zhongshan, and then crossed with local pigeons to produce Shiqi squab, which is thick in meat, tight in skin and big in chest, and is suitable for any burning method.
Shiqi's most famous roast method of young pigeons is braising in soy sauce, but I didn't know until I checked the information that this braising in soy sauce was not the other way around.
ordinary shops use "cooked frying", that is, the pigeons are marinated in marinade, dried and drenched with hot oil, so that the pigeons are scalded to a braised color.
Because the ingredients in Zhongshan are good enough, they can use "raw frying" with higher difficulty coefficient.
There is no step of marinating in raw frying, but boiling oil is poured directly until it is cooked. This method requires higher quality of pigeons, and it is also more difficult to grasp the temperature of oil. In the holy place of squab like Zhongshan, there is a high probability to taste it.
Shiqi is the urban area of Zhongshan, and restaurants all over the street, regardless of the size, basically use squab as a signboard.
But you will find that the squab on the dining table of Zhongshan people is even smaller than that eaten from other places. I don't want to be short of weight, but I want to be a raw fried pigeon, preferably a young pigeon of about 13 days.
The shiny squab skin is so tight that it is even a little difficult to tear. After tearing, it is full of juice. Because pigeons are still young and their bones are crisp, 2 per capita is not too much!
Shiqi's most famous young pigeon eater is Shiqilao, an old shop opened in 1991, which specializes in local dishes consumed by the public.

Cangzhou, a famous bacon shop in Guangzhou, has been around for 8 years, and Huangpu owners are behind it. Guangzhou Emperor Huang and Hong Kong Ronghua, the big brands of preserved meat obtained by online shopping, are all guarded by master Huang Pu.
Huangpu is one hour away from Shiqi's driving. I don't want to go to so much trouble. Shiqi has an old-fashioned gold and silver _ roasted food with authentic taste, which is small and expensive, and it doesn't support dining, but the roasted meat products of gold and silver _ are still very good.
The signature roast goose and barbecued pork are cooked without too much spices. As soon as you taste them, you will know that the baking step is well done, and the sweet and refreshing taste of the ingredients is outstanding. The sour and sweet juice without dipping is better.
preserved meat and clay pot rice are a match made in heaven. In fact, the clay pot rice cooked in a pot is also a signature, and both the clay pot rice and the young pigeon are tasted in one breath.
sanxiang town rice noodles
A day in Guangdong can be summed up in four words-porridge, noodles and rice.
Guangdong's "pink circle" is the most famous in rice rolls, but the most difficult bowl of powder for Zhongshan people to refuse is the seto powder from the small town of Sanxiang.
The most difficult thing for Sanxiang Seto powder to copy is that it is best to use local mountain spring water to wash Seto powder.
Brown rice is soaked, thrown with water, and then ground into rice flour with overnight rice. After the rice slurry is shaped, the seto rice produced by "seto" is fragrant and does not hold the belly, so it is most suitable for breakfast.

There are common chrysanthemum chicken, chrysanthemum steamed meatballs, chrysanthemum fish olive, chrysanthemum hot pot and so on. Xiaolan's restaurant will have several chrysanthemum-related dishes, even if it doesn't have a chrysanthemum banquet.
If chrysanthemums are not used to eating, I recommend you to try "Chrysanthemum Dessert".
Take Tianyuan Ice Room, a dessert shop that opened in 1989 and has the oldest qualification in Zhongshan as an example. Their signboard is a bowl of chrysanthemum water olive.
water olive is a traditional dessert with glutinous rice as the skin and red bean paste and sesame paste as the stuffing, and the soul is the chrysanthemum chaff finally sprinkled on the surface.

Zhongshan is famous for eating squab, but it is impossible to drop it without roast goose ~
As the name suggests, Songpipeng Hotel is a well-known fly restaurant, and its business is so good that it is hard to find a lunch market on weekdays.
although the environment is not so good, it is very particular about material selection and practice.
The geese should use Magang geese less than two months old, blow air, boil water, scald the skin, supercool, burn litchi firewood to keep the temperature, and wait patiently for the wonderful chemical reaction between the goose skin and the marinade.
The goose meat is well cooked. The goose skin is crisp and the goose meat is tender, with a piece of fat and thin, and a thin layer of fat. The mouth is full of mixed fragrance of wine, fruit and oil.

Yong Li's sugar and water are divided into four categories, namely bean curd, double-skin milk, dairy products and snacks. Except beef balls, all of them only need single digits, and the cost performance is really excellent.
Tofu flower and double skin milk are most recommended. Tofu flower is quite smooth and ice-cold to cool off the summer heat.
Double-skin milk is also very different from Shunde's, with a lighter milk flavor and a stronger bean flavor, which is also delicious.

The almond cake of "selling dog meat by hanging sheep's head" is actually made of mung beans. The first one is the century-old brand Zuixiang Garden in Zhongshan, but I don't know why when it comes to almond cake, it is automatically associated with Macao's specialty.
Apart from delicious food and Sun Yat-sen, Zhongshan doesn't have a particularly eye-catching tourist card, but the whole city gives people a comfortable and cozy feeling.
