First, fish wrapped in vinegar. Vinegar fish is a local specialty of Huzhou. Fish wrapped in vinegar usually take carp and crucian carp as raw materials, add tofu, bean jelly, bamboo shoots and other ingredients, and then season with special acid juice to make the fish more delicious. Fish wrapped in vinegar is hot and sour, which is very suitable for summer.
Second, jiaozi. One of Huzhou's traditional foods is jiaozi with minced meat. Meat dumplings are made of glutinous rice, pork, salted egg yolk, mushrooms and other seasonings. After cooking, it gives off a strong aroma and delicious taste. Meat dumplings are also a traditional food necessary for the Dragon Boat Festival.
Third, shad head. The head of shad is another special food in Huzhou. The head of the shad has tender white fish, which is delicious and tender. When making, the fish head is scraped clean with mahjong, pickled with seasonings such as onion, ginger and garlic, cooked in a stone pot, and finally poured with soy sauce and pepper. It tastes delicious and mouth-watering.
