The first day.
Put 180g of raw oat rice (no need to soak in advance) +240ml of clean water into an electric pressure cooker, press it at high pressure for 12min, and let off steam manually after 5 minutes in Zhong Ziran.
Cooked oatmeal should be clean and clean, without the appearance of boiling and cracking.
Rinse the cooked oats directly with cold water without rubbing them by hand. Just wash it two or three times until the oats are clear and not sticky, which is also to let the oats cool down quickly.
My tap water can be drunk directly, so I tried the most convenient method first, using tap water. You can also wash with cold boiled water and mineral water. )
Container: glass container, wide and transparent at the bottom, easy to observe. The container should be cleaned, and it is important that there is no oil! I just wash the dishes as usual and then dry them. I didn't sterilize them, so there is no problem at all.
Mix 2 grams of distiller's yeast powder+100 ml of water. (Note that koji powder will not dissolve, like lime water)
Put the washed oatmeal in a bowl and let it cool to below 30 degrees, but not more than 30 degrees, otherwise it will burn bacteria.
Add the above koji water and mix well so that each grain of rice is stained with koji water.
If you like the finished wine with more liquid, add about 200-300 ml of water. Note: how much water is added at this time, how much liquid will basically be in the finished product. If less water is added, there will be less water in the finished product.
I used100g of water, and the finished wine had only a small amount of viscous liquid like honey. Mix it with water when you eat it.

Cover the glass bowl with plastic wrap, put it in a fermentation box at 30 degrees Celsius (86 degrees Fahrenheit) and ferment for about 18-24 hours. After 18-24 hours of fermentation, the surface of oats looks unchanged and smells almost sour. If the smell of wine is obvious at this time, reduce the temperature.
Note: Temperature is the actual temperature measured by thermometer. For example, my fermentation box shows that the temperature is 26 degrees Celsius (80 degrees Fahrenheit). But the actual temperature is 30 degrees Celsius. Pay attention to observation, otherwise the temperature will be too high, resulting in too strong alcohol flavor.
I have done it twice at the temperature shown, but the actual temperature is too high, which leads to too fast fermentation and too strong wine flavor.

After the first stage, take out the bowl, put a few holes in the plastic wrap with a needle to breathe, and open the plastic wrap 1-2 minutes. Let oatmeal touch the air, which is the key to high sweetness.
Then put it back into the fermentation box to continue fermentation.
During the period, you can take it out from time to time and open the plastic wrap to let the wine touch the air, so the taste will be sweeter.
Also smell it, so as to observe whether the fermentation is too fast and adjust the temperature at any time.
The third stage
Three days after the first stage, sticky honey water began to appear at the bottom of the bowl. You can see small bubbles. Oats have obviously softened.

Put oat wine into a small bottle and refrigerate for half a month-1 month. After cold storage, the wine is still slowly fermenting, and the longer the time, the stronger the wine flavor.
Bottle for 7-8 minutes, and don't fill it too full, because the wine will continue to ferment and produce gas, which may overflow.
