Cold shrimp is a unique snack, which was first produced in Yichang, Hubei Province, and then introduced to Chongqing, Sichuan and other places, becoming a local specialty snack. Because of its unique name, it is often misunderstood as cold shrimp, and its mind is full of salty sea water and delicious shrimp meat.

Shrimp salad is very common in eastern Sichuan. Because it is smooth and refreshing, soft and sweet, it is a dessert for people to cool off. It is made by boiling rice slurry and leaking it into a cold water basin with a colander.
