You rabbit head ranks first among the four rabbit heads in Chengdu, and has developed into Dujiangyan's signature food. People who go to Dujiangyan must try it. Yoututou was founded in the early 1990s. It is selected from the best fresh rabbit heads, and its taste has been removed. Marinate it with slow fire until nine o'clock. It was put aside to wait for the guests to order, and then it was steamed in the ancestral secret marinade pot, and materials were added from the pot to mix it into spiced and spicy flavors. Diners can choose according to their own tastes.
Second, the green volume.
Onion roll is a local snack in Dujiangyan. Even the locals can't tell when it became popular. However, in Wuguiqiao street, three rooms and half lanes, the "green roll" team has occupied half of the country. There is no formal storefront here. When a few low tables and chairs on the street sit down, the boss will serve a plate of dumplings, a few small plates of shredded radish and lettuce, roll them up, dip them in secret seasoning, and stuff them into his mouth. The spicy, sweet and sour taste will be secreted on the tip of his tongue.
Third, the slag surface
Slag noodles are a kind of pasta with strong flavor in western Sichuan. The method is to take the cooked noodles out of the pot without any moisture, and then sprinkle them with ingredients made of fried peanuts, sesame seeds and sugar. Spread the noodles all over the floor while it is hot. Stir it with chopsticks before eating. The fragrant and spicy taste makes people's index fingers move.
Fourth, ice powder
For the aborigines in Dujiangyan, it is the most exciting thing to eat a bowl in summer during their childhood when materials are scarce. Now, on the streets of Dujiangyan, you can still hear the faint cries of "ice powder, ice and sweet ice powder". The price is very cheap, just add preserved fruits such as watermelon and bayberry to brown sugar water, and the taste may not be as good as before. It's good to remember and calm down.
Five, stewed chicken with ginkgo
This is a famous dish in Qingcheng Mountain, and it is also a basic dish regardless of season. Ginkgo biloba is abundant in the local area. The traditional practice is to peel off the hard shell outside ginkgo biloba, take the yellowish core inside and stew it with the native chicken. The finished chicken soup is white in color, delicious in meat and soft in ginkgo, which is especially nourishing and healthy. This dish can be tasted in almost all restaurants in Qingcheng Mountain, from elegant restaurants to farmhouse music in Houshan.
Dujiangyan is located in the west of Dujiangyan City, Chengdu, Sichuan Province, on the Minjiang River in the west of Chengdu Plain. It was built in the last years of Zhao Haoqi in the Qin Dynasty (about 256 BC ~ 25 BC1year). It is a large-scale water conservancy project organized by Li Bing and his son, the prefect of Shu County, on the basis of excavating the turtle spirit of their predecessors. It is composed of a fish mouth, a flying sand weir, a bottle mouth and other parts, and has been playing a role in flood control and irrigation for more than 2,000 years. Chengdu Plain has become a "land of abundance" with thousands of miles of floods and droughts. Up to now, the irrigation area has reached more than 30 counties and cities, with an area of nearly10 million mu. It is the oldest in the world, the only one preserved and still in use. Its characteristic is that there is no dam to divert water, which reflects the diligence, courage and wisdom of the working people in ancient China.
