first, prepare the ingredients. Sheep meat can be divided into eight categories, among which mutton brisket and sheep hind leg meat are the most suitable for making basin mutton. These two kinds of meat are just fat and thin, and their texture is soft, so they are very suitable for stewing. Try to use sweet potato vermicelli as much as possible. Sweet potato vermicelli is more resistant to cooking and tastes smooth and strong, especially after absorbing the fat of mutton, it tastes better. Seasoning, you need to prepare onion ginger, cinnamon, fennel and pepper, and you can add coriander according to your own taste.
second, the production process. First, we soak the sweet potato vermicelli in cold water to make it soft. Then cut the mutton into the size you are used to and clean it. Pay attention to being fat and thin as much as possible. Put the mutton into the pot with cold water, boil the water in the pot with strong fire, then continue to cook for one minute, and then remove the mutton for later use. After cleaning the pot, add enough water to the pot, and put the boiled mutton back into the pot for cooking. Sliced ginger, cinnamon, prickly ash and fennel are put into the bag, and the bag is also put into the pot. After covering the pot, simmer for more than an hour. You can increase the time appropriately according to your own needs for the softness of mutton. The mutton was fished out and the mutton soup in the pot was cooked. Boil the soft vermicelli in a clear water pot until it is soft and transparent, and fish it into a bowl. Add a proper amount of salt and pepper to the bowl for seasoning. Then, cut the mutton into pieces, chop the coriander and spread it on the vermicelli. Pour the hot mutton soup into the bowl, and pour it with oil and pepper according to your own taste. The mutton in the basin is finished.
