It's another corn season. Fresh and tender corn is on the market in large quantities, and the price is cheap. Every household needs steamed corn tortillas (we call them corn cakes here), which is a very simple food. It is super simple, convenient and fast. I made it myself, and it smells better than what I bought outside. The materials needed to make tortillas are: local corn, corn leaves, sugar, a little aluminum-free baking powder and a proper amount of milk powder. Note: Choose ordinary corn (soil corn) that farmers choose to sell instead of fruit corn and waxy corn. Fruit corn has too much water, and waxy corn tastes bad. Remember to decorate corn leaves and take them home when buying corn; No baking powder and milk powder. The milk powder in the picture is my mother's old-age milk powder. I thought about it when I did it later. Bao er and I wanted to eat, so we didn't add it (please forgive me). It was more authentic when steamed.
Wash and drain corn leaves; After washing the corn, as shown in the figure: from top to bottom, cut the corn horizontally into two pieces, then cut it vertically into two pieces, and then peel off the corn grains along the edge. If you think it's so troublesome, you can just cut off the corn kernels with a knife ~
Put the peeled corn kernels into a cooking machine and beat them into paste. If the cooking machine doesn't work, you can add less water, but don't add too much water, because corn will juice when it is smooth. I beat a small part of corn with a little water first, then beat it into paste, and then add the remaining corn several times to continue beating, so that there is no need to add water every time, so there will not be too much water. Of course, it's best if you can beat all the corn at once without adding water.
Pour out the paste after beating, add appropriate amount of sugar according to personal taste, and add less milk powder and baking powder at home (you can add it without adding it, and mix well.
Scoop the corn paste into the corn leaves, only to the middle part of the corn leaves, because once it is flattened, it will slowly flow to both sides.
Steam in a steamer for 5 minutes. I set the plate for taking pictures. In fact, what I usually do is to boil water in a pot, put a steamer on it, and put corn paste in the corn leaves while putting it in the steamer. When the steamer is full and the water is boiling, cover it, steam for 5 minutes, and let it cool for a while. Remember to put them together when you put them.
Take it out after steaming and let it cool slightly. The freshly steamed corn bran is wet and soft, so it will be fine after a while. It tastes best when it is hot. The steamed color is much yellow, and no pigment is added! I don't know what to sell outside ~
