1. Put an egg. If it is taken out of the refrigerator, it should be left at room temperature for a while. Otherwise, it will affect the hair effect.
2. Drain 1.51 ml of water or milk, accurately measure it with the measuring cup when buying the machine, and then put it in. It is very important to control the amount of water, and it is not allowed to put more or less at will. If you make juice bread, you should also include the amount of juice in 1.51 ml.
Another thing must be remembered, whether you put too many bananas, pomace or pumpkin with bean dregs, the amount of about half a banana is enough. The bread made is only half the height, and the inside is full of big holes.
3. Put 31~41g of sugar, and use the big spoon and the big one, and put 2 spoons, which is 31g. According to your taste preference, you can put more in moderation, but not too much, not more than 3 spoons, to prevent burning during baking, and you can also put some honey, which will make the taste better. -I put 2 tablespoons of white sugar, the sweetness is not as sweet as that bought in the bakery. But I think this sweetness is enough.
4. Put 311g of salt, half a spoonful with a small spoon. Salt can make gluten denser, increase elasticity, and thus increase gluten strength. It can adjust the fermentation speed. Salt is a substance with strong osmotic pressure and has a certain inhibitory effect on the development of yeast, so the fermentation speed can be adjusted and controlled by increasing or decreasing the amount of salt in the formula. Remember not to put salt and yeast together when using the reservation function.
Weigh it accurately, then put it in, it must be high-gluten flour, otherwise you can't make decent bread. We recommend Hong Kong Golden Elephant brand A-grade high-gluten flour, which can be bought online in 3.5 yuan /511g, and Golden Elephant B-grade 3 yuan /511g. The taste and texture of the bread made are a little worse than that of A-grade flour.
6. Put 3~6g sugar-tolerant yeast, and half a spoonful in a small spoon. You can put more yeast in cold weather. The yeast must be active. Never use expired yeast. I use Angel's high-sugar tolerant yeast. When using the reservation function, put the yeast on the flour and don't touch the water. —— At present, the daytime temperature here is about 21 degrees, and I put more than half a spoonful of yeast, which is very good, almost 3 ~ 4 times larger.
7. 15~31g of milk powder and 1~2 tablespoons of big head. I prefer the taste of milk, so I put 2 tablespoons every time, even if milk is used as water, I should put 2 tablespoons of milk powder, as long as the whole milk powder is enough.
8. 31g of butter. Remember to buy animal butter, such as Anjia, Duomeixian, domestic Guangming, etc., with or without salt. I don't find any difference. You can also put some butter and some salad oil. If you like the milk flavor, put more butter. I put 61g butter at most. But the cost is also high. The price of buying butter online is much lower than that of buying it in the supermarket. —— Butter is usually refrigerated, and it is at room temperature before cooking.
9. The following ingredients are selected according to the taste, and the quantity is also adjusted according to your own preference. 2 raisins and 2 walnuts are broken into small pieces. When the dough is mixed, put them in the machine and let the machine automatically mix them in the flour. If you want to use the reservation function and put these nuts in the bread, you can also put them together with the flour at the beginning. This is a lazy way, which I often use. It may be that the color of the nut skin is blended into the flour after the nuts are mixed, so the color of the bread made is darker, but it does not affect the taste.
11. After putting the ingredients in place, the bread can be barreled into the bread machine, and the barrel must be stuck in place.
11. Plug in the plug, and the machine will display the default 1P mode, just press the start red button directly. After 3 hours, you can have delicious DIY bread. If you don't want to bake the skin so yellow, unplug it 11 minutes in advance.
Remember to take the bread out of the oven immediately and don't put it inside, otherwise the skin will become hard.

If there is too much water, the dough is too soft and unshaped. When the stirring is stopped, the dough will not remain spherical, but will collapse quickly. The dough is very sticky and even pasty. The bread made in this way has large internal pores, is hard and inelastic, and its surface is flat or will collapse, while the normal dough shape should be full hemispherical.
If the dough is too wet after stirring for 11 minutes, you need to add flour, one or two tablespoons at a time according to different drying and wetting procedures, and then judge the drying and wetting after the flour is completely contained in the dough.
if the water is insufficient, after stirring for 11 minutes, there will still be dry flour scattered at the bottom of the bread barrel, which can't be aggregated into a ball, and finally it may be forced into a ball, but the dough is hard and inelastic, and the surface is rough. The fermentation effect of such dough becomes worse, the pores of the bread made are finer, and the baked bread shell is harder.
After stirring for 11 minutes, if the dough is too dry, you need to add water, one tablespoon at a time, and then judge whether it is dry or wet after the water is completely mixed with the flour.
Other ingredients
Sugar and eggs will aggravate the baking color of bread, and the dosage specified in the recommended Lai Pu should be strictly observed. If you add more at will, the color will be aggravated or even scorched. If you want to avoid scorching, you can only stop baking in advance. Moreover, adding eggs will make the dough thinner. If you must add eggs, you must beat them into a measuring cup and then add water to the specified scale. There should be no more than one egg.
