The squab was burned red and tasted a hundred times crisper than the potato chips you usually eat.
The appearance of the squab is also special. The fried squab is surrounded by the plate, and some shrimp crackers are also "accompanied" by it.
There are two types of squabs, those that are whole and those that have small wings.
And I like to eat its crispy wings the most. When I take a bite, the skin breaks with a "click", and then I see pieces of salty meat. It makes me hang down three feet just thinking about it.
And where can you eat the most authentic Shiqi squab?
Of course, go to the most famous "Shiqilao" restaurant in Shiqi that specializes in squab. The most iconic thing at the door is the cartoon pigeon named "Qiqi".
The squab there is also paired with a spice mixed with salt, pepper and other ingredients. Pick up a squab and dip it in a little, and the taste of the squab will be perfect.
The method of making squab is also very simple, just three steps: 1. Eviscerate the squab, drain it, soak it in brine for 20 minutes and take it out.
2. Pour fried chicken water on top and hang to air dry.
3. Heat oil in a pan and fry until the pigeon skin is crispy.
The types of squab are even more colorful: braised squab, crispy squab, braised squab, Songjiang squab, Jiangnan white pigeon, oil-soaked squab, white-cut squab, soy sauce king squab, etc.
