Tofu Soup.
Allusion: Emperor Qianlong visited Changzhou six times when he went to the south of the Yangtze River. Once, he stayed at the home of Qian Weicheng, the number one scholar in Changzhou.
For breakfast that day, Qian Weicheng prepared a bowl of tofu soup for Qianlong, plus two fried dough sticks and a sesame cake. Qianlong thought it had a unique flavor and ate it with relish. He kept saying "delicious, delicious" and asked what Changzhou people like for breakfast.
Just drink soup?
Qian Weicheng told Qianlong a story, saying that it was related to Zhu Yuanzhang, the founding emperor of the Ming Dynasty.
It is said that when Zhu Yuanzhang was a monk, he followed the abbot to visit Honglian Temple in Changzhou. There was a drought in Changzhou that year, and there was no drop of rain for more than 50 consecutive days. In the year of the disaster, Honglian Temple could not produce anything delicious.
For food, the kitchen put rice grains, green vegetable leaves, tofu cubes, plus the famous Changzhou Bean Zhai Pancake, poured them into a pot, heated them up, and served them to the abbot and Zhu Yuanzhang.
After Zhu Yuanzhang, who was half-starved, devoured the soup for a while, with the delicious fragrance still lingering on his tongue and lips, he asked the master what kind of soup it was. The master said it was "pearl, jade and white jade soup" (pearls are rice grains, jade is green cabbage leaves, and white jade is...
tofu cubes).
After Zhu Yuanzhang became emperor, he often missed the delicious "Pearl Jade White Jade Soup" he had eaten at Honglian Temple in Changzhou, so he invited the chef of Honglian Temple to Nanjing and asked him to make "Pearl Jade White Jade Soup" again.
He eats.
After Zhu Yuanzhang ate it, he felt it was bland and not as delicious as before. He asked: "Why is the soup made by the master not as delicious as before?" The chef said: "Only hungry people feel delicious when they eat. Now you are the one who eats it."
The emperor has eaten all the delicacies in the world. That soup is just a home-cooked food for ordinary people, and naturally it is not as delicious as the royal meal..." In order not to forget the sufferings of the past and the kindness of the people of Li, Zhu Yuanzhang often asked the imperial chef to give it to him.
He made "Pearl Jade White Jade Soup" for breakfast.
After hearing this, Qianlong suddenly realized that Changzhou people eating tofu soup for breakfast also had the meaning of teaching people to be grateful.
Easy to make: 1. Cut the tofu into small pieces, cut the duck blood and louver into shreds.
Beat the eggs into egg liquid.
If you buy mustard shreds or strips, cut them into cubes.
2. Put some water in a pot and bring to a boil.
3. After the pot is boiled, put the tofu, duck blood and louver into the pot.
After the fire boils, turn to low heat.
With salt.
(They are all easier to cook, just cook them for a few minutes. Add the hard and thick ones bought from louver, so you can cook them for a while.) 4. Pour the beaten egg liquid into the pot.
Pinyin: Stir while pouring to prevent egg drop from clumping.
5. Take an appropriate amount of starch, add cold water to boil, pour it into the pot, and stir.
Wait until it becomes thick.
6. Turn off the heat and add coriander and mustard powder.
7. Set up a frying pan next to it and fry the bean dregs cake.
Just golden on both sides.
8. In order to prevent the bean dregs cakes from becoming soft when soaked in the soup, you can add the bean dregs cakes after placing them in a bowl, so that they taste crispy and more delicious.
