It is very cold in winter in the south, and there is no heating at home. It gets cold as soon as it is served. Eating hot pot in the New Year is the choice of many families. Hot pot is not only delicious, but also free to choose your favorite ingredients to satisfy the taste of the whole family. Because there are children at home, I eat hot pot for the New Year. This soup hot pot stewed with chicken ribs is the most suitable choice.
Exercise:
Chop the ribs into small pieces, chop the chicken into small pieces, put it in a pot with cold water, add ginger slices and onion knots, and cook the wine to remove the fishy smell;
Blanch, remove, put in a saucepan or time-saving pressure cooker, add ginger slices and water and stew.
Pour the cooked soup and meat into a hot pot, add salt, pepper and chicken essence to taste, and add onions, mushrooms and corn to enhance flavor. If you have bacon at home, you can add a few slices of bacon to cook it, so that the taste of the hot pot is richer, so that a pot of soup can be eaten as a hot pot.
Seasoning: It is even more important to eat clear soup and hot pot. Second, steamed bacon.
Hunan people love to eat bacon, and this kind of bacon steaming is absolutely indispensable for Chinese New Year. Our bacon includes bacon, sausage, preserved fish, preserved duck and preserved chicken. Generally, everything except preserved fish can be steamed directly. The best way to eat bacon is to steam it directly, so that the original flavor is the best.
Practice: Wash the bacon, sausage, duck and chicken with warm water, then steam them in the pot for half an hour, then steam them into thin slices and put them on the plate.
Third, steamed bass.
Every year, fish is an essential dish for New Year's Eve. All common fish personally think that perch is the best. Fish is tender but not fishy, with high cost performance. It may increase slightly during the New Year in China. This is a dish suitable for all ages. Although Hunan people love spicy food, this steamed fish is also an essential dish at the banquet.
Exercise:
After handling the fresh bass, put a knife flower on the back and put a little salt on the body to marinate for a while. If you are afraid of fishy smell, you can marinate it with a little cooking wine.

Braised pork knuckle
The big pig's trotters have the most Chinese New Year atmosphere. They are soft and waxy, and they eat meat to celebrate this year's harvest. This braised trotters is a must for our New Year's Eve dinner.
Exercise:
Chop pig's trotters into pieces, put them in cold water, add ginger slices, onion knots and cooking wine, boil them over high fire, and blanch them to remove fishy smell.
Put oil in a hot pan, stir-fry the crystal sugar until it melts, stir-fry the trotters and wrap them with sugar.
Add salt, light soy sauce, light soy sauce, soybean sauce, dried chili, ginger slices, star anise and fragrant leaves, and stir well.
After boiling in hot water, stew for 2 hours or press in pressure cooker for 20 minutes.
After stewing, the juice is collected by fire.
Five, stewed duck
When I was a child, I ate pork, chickens, ducks and geese at home during the Spring Festival. Goose tastes terrible now, but ducks are still indispensable. There are many ways to cook ducks, such as blood duck and beer duck, which are served as meals. However, you should eat ducks in a more atmospheric way during the New Year. You can stew the whole duck, then cut it into pieces and dip it in the sauce.

The ducks raised by the best buyers taste better; Deal with the washed ducks, don't chop them up.
Put oil in a hot pan, put ginger slices and fry the whole duck, so that the duck skin can get oil.
Add star anise, dried Alpinia officinarum, fragrant leaves and dried capsicum, and add water to boil.
Put the duck in the pot and stew until the meat is soft and rotten, which tastes better.
After stewing, let it cool, chop it into small pieces, and you can eat it directly with the dip in the hot pot.
Vi. Pearl ball
Glutinous rice pearl pills are delicious and can be directly used as staple food. You can't miss this delicious food when you are young.
Exercise:
Add chopped lotus root or water chestnut, salt, pepper, allspice powder, chicken essence, onion, egg and starch and stir in one direction.
Add a small amount of onion and Jiang Shui in three times and stir until the onion juice is completely absorbed. When the meat foam is thick, you can hang it.
After cleaning the glutinous rice soaked in advance for one night, squeeze the balls out of the tiger's mouth and wrap them evenly with glutinous rice.
Steam with hot water for about 10 minute.
