1. Preparation: onion, ginger slices, dried peppers, garlic chopped pepper sauce, soy sauce, fish black bean oil and a bream. It's the kind with a wide belly, as shown in the following figure
2. Scrape off the scales, wash them, then chop off the fish head directly, and then clean the fish's internal organs directly from the fish crevasse and clean the fish's interior.
3. Use a knife to cut long strips along the back of the fish towards the belly, with an interval of 1. Do not cut off the belly. Then put the cut fish body on a plate, put it in the shape above the picture, put the fish head in the middle, then sprinkle salt on the fish body evenly, sprinkle some soy sauce, onion ginger and cooking wine, and then set aside to marinate for half an hour.
4. Boil half a pot of water, then put the fish together in a steamer, steam on high fire for 5-1 minutes, and then turn off the fire for "virtual steaming" for two minutes.
"virtual steaming" means as the saying goes, turn off the fire, stew for a while and then open the lid.
5. After steaming, pour out the juice from the fish plate, remove the onion and ginger, sprinkle a layer of garlic chopped pepper sauce next to the fish head, add some fish soy sauce, wash the dried peppers and cut them into rings, and decorate them one by one on the fish segments, and then put some coriander leaves aside.
6, put oil in the pot, heat it, then pour it on the steamed fish, and there will be a "squeaky" sound, and then this plate of guppies can be eaten.
Note: If you don't want to pour out the soup steamed from the steamed fish, you can add some white wine before steaming, only adding cooking wine, and the fishy smell is not very thorough.
