Traditional bean sprouts are mainly bean sprouts such as soybean sprouts, mung bean sprouts and wide bean sprouts. With the continuous development of the production and research of sprouts, the definition of sprouts is constantly revised and expanded, which greatly enriches the varieties of sprouts.

Among bean sprouts, the newer ones are red bean sprouts, black bean sprouts, red bean sprouts, broad bean sprouts, pea sprouts, peanut bud, alfalfa sprouts and flat bean sprouts.

Among the seed buds produced by vegetable seeds, there are mustard bud, mustard bud, Chinese cabbage bud, solitary vegetable bud, water spinach bud, sunflower bud and so on.

Among the seed buds produced by crops and oilseeds are buckwheat buds, sesame buds and flax buds.

There are many kinds of new buds in the body. For example, the imported Bud Mulai Chicory, the Chinese wolfberry bud, pepper bud, Malantou and chrysanthemum brain excavated from traditional sprouts. There are bergamot tips, pepper tips and so on. Appear in the North-South communication.

Bud sprouts not only add new varieties, but also have many new changes in cultivation methods and eating methods. For example, in the past, Toona sinensis buds were mostly collected from Toona sinensis trees around Grain Rain, but in the new production method, Toona sinensis seeds germinated and grew into new buds. In order to distinguish Toona sinensis from trees, it was renamed Toona sinensis. The flavor of Toona sinensis buds produced by the new technology is better than that of Toona sinensis buds. In the past, bean sprouts ate short buds, but new bean sprouts ate long buds (sprouts) in addition to short buds.

As one of fifteen kinds of vegetables, the research work of sprouts is also expanding and deepening. Its production technology is also constantly improving and innovating. With the joint efforts of many vegetable researchers and producers, there will be more varieties of sprouts and the growing demand of consumers will be met (see table 1).
