4. Tear the bird's nest into filaments according to the texture, and put it in clean water to continue soaking for about 1 hour. At this time, some fine impurities of feathers will float to the surface of the water and start cleaning the swallow hair. Swallow hair is very fine, so you can use tweezers to clamp it. My practice is to stick the hair floating on the water with chopsticks. Today's high-quality bird's nest is generally not hairy). Don't throw away this water soaked in Bai Yan after filtering, and keep it. Then change the cleaned Bai Yan with water for two or three times for repeated cleaning, and then drain it;

5, put water in the steamer to boil, put rock sugar and Bai Yan in the stew bowl, and inject filtered water soaked in Bai Yan until the water is 2-3 cm below Bai Yan. After hydrological stewing 1 hour or so, the rock sugar bird's nest is stewed.
