2. Cows are ruminants and have four stomachs, namely rumen, reticulum, flap stomach and abomasum. The first three stomachs do not secrete digestive juice, which is also called forestomach, and the fourth stomach is the real stomach.
Except one abomasum is the digestive organ of cattle, the other three stomachs with auxiliary functions are all used for cooking. According to their respective characteristics, these three kinds of stomachs are called tripe, hairy tripe and tripe.
The beef tripe is the digestive organ of cattle, and the beef tripe is the storage room of food. Cattle first put the forage in the belly of the louver, and then return to their mouths at 2-3 am to chew slowly, that is, ruminate, and then swallow it into the hairy belly for digestion and absorption.
