Pizza can be stuffed with durian filling as follows:
Durian Pizza Directions:
Materials: 150g of high-gluten flour, 3g of salt, 2g of sugar, 4g of low-sugar dry yeast, 15g of whole egg, 21g of milk, 54g of water, 5g of olive oil
Fillings: 120g of grated mozzarella, 260g of cream cheese filling, 130g of durian puree, 9 canned oranges
Cheese filling: 200g cream cheese, 60g powdered sugar
Steps:
Put the refrigerated ingredients back to room temperature.
Make the dough: mix the pizza ingredients together, knead the dough until the surface is smooth, roll the dough, cover and ferment, when the dough swells to twice its original size it is ready, pat the dough with your hands to give it gas, roll it again, wrap it in plastic wrap and let it rest for 15-20 minutes in the chilled refrigerator.
Gently remove the rested dough from the container without breaking its round shape, place it on the counter, sprinkle the top and bottom sides with more dry flour, press it with your hands or roll it out with a rolling pin, shape the dough into an even patty, place it on a pizza pan, and cover it and let it relax for 20 minutes.
To make the cream cheese filling: cut the cream cheese into small pieces and soften at room temperature; sift the powdered sugar and set aside; using a chef's machine or handheld whisk, mix all the ingredients on medium-low speed, and continue to mix until smooth and grainy.
Mix the durian puree with the finished cheese filling, then spread the mixture evenly over the pizza, sprinkle with grated mozzarella, and arrange a few cans of orange.
Preheat the oven at 200 °C. Place the pizza in the middle of the oven and bake for 15-20 minutes.
