Beer Duck
Step 1: Wash the duck, chop it into small pieces, put clear water in the pot and put the duck in cold water. The duck meat made in this way will be very tender.
Step 2: After the duck meat is put into the pot, add 3 slices of ginger and a proper amount of cooking wine to the pot, which can well remove the fishy smell of the duck meat.
Step 3: Cook the duck for about 15 minutes, take out the duck, rinse off the floating foam and put it in a big bowl for later use.
Step 4: Add a little oil, add 60% hot oil, and saute shallots, ginger and garlic.

Step 6: fry the duck until the water is almost dry, then add a piece of cinnamon, two fragrant leaves, two star anises and some dried peppers.
Step 7: Add another spoonful of bean paste, two spoonfuls of soy sauce and one spoonful of old extracted essence.
Step 8: Then pour a bottle of beer and a bowl of boiling water and simmer for 30 minutes.
The last step: after the duck is stewed, add a proper amount of chicken essence, add chopped red pepper and green pepper, and then collect the juice on high fire, and the delicious beer duck is finished.
