1. Cold water brewing method. After the eggs are cooked, drain the hot water from the pot and add cold water. Cold water causes the egg to shrink in the shell, increasing the space between the egg and shell, making it easier to peel. Crack both ends of the egg. When the eggs are cold, remove them from the water and dry them with paper towels. Pick up an egg and use one end to knock it against a hard surface (such as a countertop) to crack the shell. Kowtow first, then the other. There will be an air chamber at the large end of the egg. Once this end is broken, the eggs will peel easily. If you don't have a hard surface to crack the eggs on, you can use the back of a spoon to crack the shells. Just one or two steady knocks is enough.

2. Rolling and kneading method. Crack both ends of the egg. When the eggs are cold, remove them from the water and dry them with paper towels. Pick up an egg and use one end to knock it against a hard surface (such as a countertop) to crack the shell. Kowtow first, then the other. Place the egg on its side on the counter, then use your palms to press on the egg and roll it forward. You need to apply enough force to the egg so that the shell can break while still forming a "network" of cracks. Soak the egg in a bowl of warm water and use your thumb to peel off a broken piece of eggshell starting from the big end of the egg. Then you will see that the entire eggshell comes off in less than a second.

3. Shaking method. When the eggs are done pour off the hot water and add cold water. Let the eggs cool quickly. Put a lid on the saucepan. Pour off the cold water and cover the pot with a fitting lid. Hold the lid with your hand and shake the pot vigorously. Rinse off the shells. When you open the lid of the pot, you will find that the eggshell has been broken into many small pieces. What we have to do now is to clean up the mess and remove these broken shells. The disadvantage is that it may damage the eggs.
