What is the difference between aged vinegar, rice vinegar and old vinegar?

As a Shanxi person, I still have some research in vinegar. Shanxi aged vinegar, Zhenjiang rice vinegar and Duliu old vinegar are the three traditional famous vinegars in China. The difference between them is mainly in the three aspects of raw materials, production methods and uses.

The raw materials of aged vinegar are sorghum, barley and pea. The whole production process has gone through five steps of "steaming, fermentation, smoky, drenching" and "sunshine", and then through the natural fermentation of "summer sunshine, winter ice", to remove and preserve the essence, and brew the aged vinegar for the sake of the aged vinegar. Shanxi old vinegar has black and purple color, bright liquid, rich sour aroma, soft, mellow, not astringent, not mildewed, not frozen in winter, the more you put it, the more fragrant it is, the longer you put it, the more it does not rot.

The raw material of rice vinegar is millet. The production process is to steam the soaked millet, add barley malt and then put it into the tank for saccharification. Then the aged quartz is added to the pulp juice for fermentation. Finally, the fermented juice is sealed into a vinegar vat for aging, and rice vinegar is made after about 100 days. This kind of vinegar has a golden color, strong acidity, fragrant odor, long-lasting storage, less precipitation, and no skin. Rice vinegar has a strong special fragrance that can promote appetite, and the content of acetic acid is not high, the vinegar flavor is not strong, and it is very suitable for the garnish of cold dishes and snacks.

Old vinegar is mainly made of sorghum and Yuanmai as raw materials, together with the Daqu made of wheat and pea as saccharifying agent, adopting the traditional special fermentation process, solid fermentation, two maturation, and brewed by natural tumbling for three years. The finished product is reddish in color, pure and fresh in taste, sweet in acidity, and has a pleasant aroma.

Three kinds of vinegar have their own characteristics, you usually like to use vinegar is which one? Welcome to exchange vinegar experience.
