Fresh pork (pork ribs or pork belly can be used), salted pork, bamboo shoots, ginger slices, seasoning: cooking wine.
method of work
1 bamboo shoots are shelled and cut into hob blocks. After adding a little salt in clear water, the bamboo shoots are boiled for 5 minutes to remove astringency;
2 fresh meat and bacon are cut into pieces respectively, and blanched to remove blood foam;
3. Put fresh meat and ginger slices into a stew pot, add enough water to boil, add cooking wine to remove fishy smell, and turn to low heat for slow stew 1 hour;
4 Add bacon and bamboo shoots, bring to a boil, and then continue to simmer 1 hour.
Tips:
1 the ratio of fresh meat to salted meat is 2:1.
Because of the bacon, generally speaking, you can not put salt. If the taste is heavy, you can put a small amount of salt as appropriate.
Because bamboo shoots contain oxalic acid, it can be removed by boiling with light salt water for 5 minutes to prevent stones.
