Fried dried salted fish with bean sprouts is also a hometown dish. My hometown is the Yangtze River on one side and the sea (Yellow Sea and East China Sea) on the other. Aquatic products are very rich. So this is also our specialty.
Food preparation
130g bean sprouts, 50g dried salted fish, 15g red pepper, a little onion, ginger slices and minced garlic.
1g salt, 2g chicken powder, 3ml water starch.
Appropriate amount of cooking wine and cooking oil.
Cooking steps
1 Cut the washed red pepper in half, remove the seeds and shred.
Boned salted fish, cut into strips and diced instead.
3 Put the cut ingredients into a dish for later use.
4. Pour a proper amount of water into the pot, bring it to a boil over high fire, add a little cooking oil, pour bean sprouts and cook for half a minute until it is 80% cooked.
5 Remove the cooked bean sprouts for later use.
6 Take another pot, oil it, heat it to 40%, and pour in diced salted fish.
Fry on medium heat for about half a minute until it smells burnt.
8 Remove the fried diced salted fish for later use.
9 Take the oil pan, add ginger slices, minced garlic and red pepper, stir-fry until fragrant.
10 Pour in bean sprouts and stir-fry quickly and evenly.
Add onions.
12 stir-fry for a while until the onions are soft.
13 Pour in a proper amount of cooking wine and stir fry for a while.
14 Add diced salted fish and stir well.
15 Add chicken powder and salt, stir well and season.
16 Pour appropriate amount of water starch.
17 stir quickly and evenly.
18 Take out the fried dishes and put them on the plate.
