1. 500 grams of water chestnuts, 3 segments of green onions, 3 slices of ginger, 1/2 teaspoon of Sichuan peppercorns (3 grams), 3 star anise, 3 bay leaves, 2 teaspoons of salt (10 grams).

3. Cut green onions into sections and slice ginger. Put the washed water chestnuts into the pot, then pour water to cover the water chestnuts, add onion segments, ginger slices, pepper, star anise, and bay leaves.
4. Cover the lid, bring to a boil over high heat, then reduce to medium heat and cook for 15 minutes.
5. When eating, break open the shell directly and eat.
