Xiangshui rice, which is well-known at home and abroad, is produced in Bohai Town, Ning 'an City, Heilongjiang Province. Bohai Town is located in the tourist golden triangle area of Jingbo Lake, crater underground forest and Bohai Style Garden, which is a famous "land of plenty" and has a good reputation as "the south of the north" in history. During the period of Bohai Kingdom in Tang Dynasty, advanced irrigation and rice cultivation techniques had appeared in Bohai Town. Xiangshui rice is named after its growth on volcanic basalt slate. The reason why Xiangshui rice is of excellent quality and unparalleled in the world is entirely due to its growth in the unique ecological environment in the world. The land where it grows is a large area of basalt "slate land" formed by the flowing and solidification of volcanic magma when the volcano erupted hundreds of millions of years ago. The thickness of soil on slate is about 10~30 cm, which is formed by rock weathering and humus deposition for hundreds of millions of years, and the contents of minerals, organic matter and trace elements are extremely rich. The irrigation water source comes from the high-quality water source in the upper reaches of Mudanjiang River flowing from Jingbo Lake, the second largest alpine dammed lake in the world. The water quality is pure and clear, and there is no industrial pollution. Because the slates in the slate land absorb a lot of heat during the day and radiate the absorbed heat at night, the ground temperature and water temperature in the slate land are about 2~3 degrees Celsius higher than those in the ordinary paddy field. In the north where the temperature difference between day and night is large, a natural environment conducive to rice growth is formed, and rice absorbs sufficient nutrients and has a very high maturity. Xiangshui rice is a kind of green natural health-care rice which enjoys a good reputation at home and abroad. Its grain is blue as jade, crystal clear and heavy as sand. The porridge juice is like milk (high collagen content), and the steamed rice oil is bright and fragrant (high vitamin E content). The rice is fragrant and palatable, and its nutritional value is extremely rich. According to the whole-course follow-up inspection by the Grain Quality Supervision and Inspection Center of the Ministry of Agriculture, the content of Vb 1 in Xiangshui rice is per kilogram 1.4 mg, while that in ordinary rice is only 0.22 g, Vb2 is 0.5 mg, ordinary rice is 0.06 mg, Vb6 is 17.3 mg, and ordinary rice is1. And the content of protein is appropriate, which is 7.26% (6.8% for common rice). This content not only keeps the nutritional value of Xiangshui rice, but also does not affect the eating quality of Xiangshui rice. Because of the large temperature difference between day and night in the producing area, the amylose content in the starch in Xiangshui rice is low (16.47%). The rice stewed with this type of rice is soft and non-sticky, with moderate texture and delicious taste, and will not regrow after cooling. Among them, the contents of Chinese amino acids, vitamins and mineral trace elements are much higher than that of ordinary rice. Xiangshuimi also has a beautiful legend. According to legend, in ancient times, the Li brothers fled to Bohai, and a Taoist priest on the road gave them a wooden stick. The two brothers each have a beautiful daughter, one is Jinshui, and the other is Yinshui. One day, the two sisters came to the riverside to wash clothes with a wooden stick made of that wooden stick. Unconsciously, the slate at the foot of Jinshui slipped into the river and became a beautiful teenager. It turned out that the slate belonged to the imprisoned three princes of the Dragon King, and the wooden stick was a magic wand. As a result, Jinshui and the third prince formed a loving couple and returned to the province every year. After a flood, the big slate left black sandy soil, and people planted rice on it. The longer the rice, the better, but Jinshui girl never came back. People missed their loved ones, so this village was called Xiangshui Village, which was later interpreted as Xiangshui Village.
