Note: The bowl on the left is a combination of various purchased materials, and the bowl on the right is ordinary flour. In addition, I added oatmeal, sunflower seeds and flaxseed.
2. Put common flour, whole wheat, rye, oats, sunflower seeds, sesame seeds, flaxseed and oatmeal, 3g yeast and 2g salt into a bread barrel, add 1 teaspoon maltose into about 500g warm water, and slowly pour it into the bread barrel in a dough state.
3. At the end of the bread machine, pour about 1 tbsp olive oil. Note: this method needs to put some oil in the bread, which can prevent the dough from drying out.
4. Send twice the size.
5. Pour the dough on the table, knead it, divide it into two parts, cover it with plastic wrap and let it stand 10 minute.
6. Coat all five sides of the bread box with a thin layer of oil.
7. Sprinkle a thin layer of powder. So I won't touch it.
8. Then knead the two doughs into long strips.
9. Put it in a bread box and put it in a warm place for the second fermentation to double the volume. Note: My method is simple. Cover the bread box with plastic wrap, put it in the oven, close the oven door, and turn off the power after the oven is heated for about two minutes. Bread is in this warm environment, and it takes about 55 minutes to reach the picture.
10. Bake the bread blank in an oven at 230 degrees for 10 minute, then lower the temperature to 175 degrees and continue baking for 30 minutes.
