100g fresh mango cubes, 20g whipping cream, 50g milk, 15g fine sugar, 3g gelatine tablets?
Method/steps
1. Soak gelatine slices in ice water until soft and set aside;
2. Add diced mango to whipped cream and puree with a food processor;
3. Add milk to fine sugar, Heat over low heat to about 80 degrees;
4. Remove from heat, add gelatin slices that have been soaked and squeezed out of water, stir evenly;
5. Pour the milk liquid into the mango into the mud and stir evenly;
6. Use a spoon to put it in the mold and refrigerate until it solidifies.
