Scales, gills and viscera of yellow croaker are removed, washed, sliced with onion, ginger and garlic for later use, and dried with red pepper and star anise.

Dry the water on both sides of yellow croaker with oil-absorbing paper, cut several knives diagonally along the fish body into a diamond shape, and pat dry the starch on both sides.

Heat hot oil in a hot pot, add ginger slices, stir-fry slightly, add croaker along the side of the pot, and fry over medium heat, focusing on the fish head, so that the fish won't smell fishy.

Fry the fish on one side in medium heat, then turn the other side and fry it on low heat until the fish turns yellow. Add onion, garlic, star anise and dried red pepper, stir the oil in the pan and heat the fish.
