Is maltitol sugar-free
Maltitol, also known as hydrogenated maltose, is a disaccharide consisting of one molecule of glucose connected to one sorbitol through an α-1,4-bond. It is a colorless transparent crystal, soluble in water, insoluble in methanol and ethanol.
The hemiacetal hydroxyl group of maltose is reduced to hydroxyl, converted to maltitol, increasing the sweetness, the relative sweetness is about 0.9 times that of sucrose, and the flavor is pure and close to sucrose.
