The bread machine has many modes, and you can use the most time-consuming mode to knead the dough.
It is not recommended to use a bread machine for the fermentation dough function. The fermentation temperature of the bread machine is difficult to control and sometimes it will overheat.
1. Kneading noodles
1. The temperature of my ACA mb600 at home is a bit high, so I usually use a bread machine to knead the dough (use one mode for 30 minutes, and then restart it and use it again) This mode can be used for another 30 minutes to stretch it into a state close to a thin film)
2. Fermentation
1. Then put the dough in a dish, seal it with plastic wrap, and put it in the oven.
2. Put 80 degree hot water in a deep basin on the lower floor of the oven.
3. Set the oven to 30-35 degrees Celsius and start fermenting for 90 minutes until the dough has doubled in size. Just press it with your hands and the dough will not shrink.
Tips: Adding baking powder to the dough will give a better texture, but of course you can leave it out.
