Celery cod fillet.
Ingredients:
Half a catty of cod, three liang of celery, one green onion, three corianders, appropriate amount of salt, a little cooking wine, a small piece of fresh ginger, 15 grams of starch, appropriate amount of cooking oil .
Method:
Cut the cod into about 5mm thick fish fillets with a diagonal blade, use cooking wine, salt, shredded ginger and starch to mix well, and marinate for half an hour;
Cut the celery diagonally into sections about 5cm long, and blanch them in a pot of boiling water containing salt and cooking oil;
Cut the scallions diagonally into sections about 3cm long; cut the coriander into sections about 2cm long.
Heat the oil in a pan and stir-fry the cod fillets over high heat. After all the colors change, add the blanched celery and green onion segments and quickly stir-fry until fragrant. Add the coriander segments and stir-fry twice before serving. The color of the dish is white and green, the fish fillets are fresh and fragrant, and the celery is crisp and tender. It is a very good accompaniment dish.
