Ingredients: kumquat 200g, rock sugar 160g.

1, fresh kumquat is washed, pedicled, soaked in salt water for at least 1 hour, or the oil on the surface of kumquat can be gently brushed with a small brush.
2. Cut the kumquat horizontally and then pick out the seeds.
3. Gently cut 4 or 5 knives on the surface of kumquat. Do not cut it in half. Press it gently with your fingers.
4. Put rock sugar and appropriate amount of water in the pot to boil.
5. After the crystal sugar is completely melted, pour in kumquat and simmer for 10 minute until the sugar water is thick.
6. Turn off the fire, let it cool and soak for one night. You can put kumquat in a glass jar and seal it, put it in the refrigerator and eat it in a few days.
